What people don’t understand is the fact that gluten is not necessarily bad, some people are just gluten intolerant and simply need to follow a gluten-free diet. A gluten-free diet is often nutrient deficient so if you are thinking on following a diet just because you heard it helps with weight loss, think again.

1. Gluten Free Apple Crisp
This recipe is part of the gluten and dairy free desserts and it is simply delicious and suitable also for those who are lactose intolerant.

6 apples (Macintosh, Delicious, Pink Lady, Gala)
1 tablespoon lemon juice
2 tablespoons pure maple syrup
2 teaspoons tapioca or arrowroot starch
1 cup quinoa flakes
3/4 cup sorghum flour (or brown rice flour)

Although this is not actually what comes to mind when you think of dieting, this pudding is amazing and certainly not suitable for diabetics.

2/3 cup granulated sugar
2 tablespoons cornstarch
1/8 teaspoon kosher salt
3 cups whole milk
4 large egg yolks
1/2 teaspoon pure vanilla extract
6 ounces bittersweet chocolate, chopped
1/2 teaspoon unsweetened cocoa powder

3. Gluten Free Bars spiced with Pumpkin
It does not necessarily have to be Christmas or Halloween for your house to smell like pumpkin pie. This is yet another recipe part of the gluten free dairy free deserts.
Ingredients:
2 large free-range organic eggs or Ener-G Egg replacer
1/3 cup extra light olive oil or grapeseed oil
1 cup light brown sugar, packed
1 cup organic canned pumpkin
2 teaspoons bourbon vanilla extract
1 and 3/4 cups Pamela’s Ultimate Baking Mix (or gluten-free flour mix with 1 teaspoon baking powder, 1/2 teaspoon baking soda, 3/4 teaspoon salt, and 3/4 teaspoon xanthan or guar gum added)
1 teaspoon cinnamon
1/2 teaspoon GF Pumpkin Pie Spice- or a blend of nutmeg, cloves, allspice, ginger

1 cup (2 sticks) unsalted butter, cut into pieces, plus more for the pan

1 lemon
1 navel orange, quartered

1/2 vanilla bean, split, or 1/4 teaspoon vanilla extract

5 cloves

1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
3-4 tablespoons raw agave nectar, to taste (or your favorite sweetener, to taste)
4 tablespoons coconut oil
1/2 cup vanilla soy, hemp, nut, or rice milk
